Roasted Carrot Soup

This soup is amazing. It tastes fantastic, only has a few ingredients and it'll leave your family wanting more.

Preparation Time: 10 minutes
Cooking Time: 50 minutes
Serves: 4

Ingredients
1 kg carrots
1 onion
1 litre vegetable or chicken stock
2 cups water
1/2 tsp garlic powder
salt and pepper
1 tbs olive oil

Method
  • Preheat oven to 200C and line a baking tray with baking paper.
  • Peel the carrots and onion and chop into large chunks. Place them onto the baking tray and drizzle with oil. Season with salt and pepper.
  • Roast for 35 minutes or until carrot is tender, turning once during cooking.

  • Place stock and water into a large pot over high heat. Add the carrots, onion and garlic powder. Cover and bring to the boil then reduce heat and simmer for 5 minutes.

  • Blend the mixture until smooth and then return to the heat. Simmer covered for 10 minutes.
  • Serve with fresh bread .
