Roasted Cauliflower Mixed with Parmesan and Balsamic

For something a bit different with a vegetable, try this recipe as it is both filling and tasty.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 4 servings as accompaniment

Ingredients
½ cauliflower - about 4 cups
1 tbsp olive oil
½ tbsp dried marjoram
1 tbsp balsamic vinegar
Up to ½ cup Parmesan cheese

Method
  • Preheat the oven to 210°/190° fan forced.

  • Mix together the cauliflower, oil, and a bit of salt and pepper to taste.

  • Place this on some baking paper on a tray and bake until the cauliflower begins to soften and brown a bit - this will take about 15 minutes.

  • Take out of the oven and add the vinegar and mix. Sprinkle with the Parmesan cheese.


  • Return to the oven and bake for another 5 - 10 minutes more or until the cheese is melted.

  • Serve - I served it with my home made taco bowls filled with chicken and salsa.
