Roasted Eggplant Edamame Noodles

A new favourite recipe of mine, these Asian noodles have a lovely smokey taste thanks to the roasted eggplant and sesame oil.

Incredibly moreish but reliably healthy too, this meal is perfect all year round.



Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients
1 tbsp olive oil
1 eggplant, cut into bite-size pieces
180g soba noodles
2 cups edamame beans, cooked
1/2 cup coriander, chopped
1 tbsp sesame seeds
2 tsp sesame oil

Method
  • Preheat oven to 220C.
  • Spread eggplant pieces over a lined baking tray, and drizzle with the oil. Cook for 25 minutes or until golden and cooked through.

  • Meanwhile, heat a small pan of water, and once boiling, add the soba noodles. Reduce to a simmer and continue to cook for 5-8 minutes. Once cooked, remove from heat and drain.
  • Divide noodles between four dishes and top with the edamame beans, coriander, sesame seeds and sesame oil, and eggplant pieces once cooked.
