Roasted Ginger Rosemary Pork Cutlets
It is such an easy and satisfactory recipe that can simplify cooking steps to have both perfectly cooked tender and juicy pork chops and colorful and healthy veggies in one process.

Makes: 2 servings
Ingredients
2 pork cutlets
100g mixed color cherry tomatoes, halved
1 large brown onion, diced
50g french beans
some fresh rosemary leaves
1 tbsp minced ginger/ginger ground
1/2 tsp sea salt
some pepper ground
2 tbsp home tomato sauce
1 tsp extra-light olive oil
Method
Use a meat hammer to beat and tenderize pork cutlets.
Marinate the cutlets with 1 tbsp minced ginger/ginger ground, 1/2 tsp salt, some pepper ground and some fresh rosemary leaves, put in fridge for at least 1 hour.
Pre-heat oven to 200°C.
In a roaster tray, grease the tray with oil, add diced onion, mixed tomatoes and french beans (or your favourite vegetables).
Sprinkle with some salt and pepper.
Heat 1 tsp oil on a frypan over high heat to fry each side of cutlets for a minute, then transfer and place them on the veggies, sizzle with 2 tbsp homemade tomato sauce.
Put in oven and roast for 20-25 minutes or until cooked through.
Serve hot as it is or divide between serving plates.
