Not your normal pikelet. These delicious pikelets are a great mouthful and something a little different for your afternoon tea. Great with a plum dipping sauce or cream for extra indulgence.
Preparation Time: 35 minutes
Cooking Time: 10 minutes
Makes: 16 small pikelets
Ingredients
1 cup of self raising flour
1 egg
1 cup of milk
6 plums
1 teaspoon of caster sugar
½ teaspoon of cinnamon
Butter for frying
Method
Preheat oven to 180 degrees (fan forced).
Cut plums and place onto oven tray. Sprinkle with caster sugar and roast for approx. 20-25 minutes or until they collapse.
Let plums slightly cool and then blend in food processor or blender.
In a medium bowl, mix flour, cinnamon, egg, milk and half a cup of plum puree. Whisk well.
Preheat fry pan. Spoon mixture onto buttered pan. Cook for a minute both sides – or till a lovely golden brown.
Serve with remaining plum puree.
Note: My plums were very sweet, so I didn’t use much sugar. Please adjust to suit your fruit.
