Roasted Pumpkin Dip

This recipe is great for left over roast pumpkin, and can be served warm or cold.



Preparation Time: 5 minutes
Makes: 2 cups of dip

Ingredients
2-3 pieces of left over roasted pumpkin warm or cold
1 teaspoon of smoked paprika
Salt and pepper to taste

Method
  • With a stick blender purée the pumpkin
  • Add in paprika and some salt and pepper and taste, adjust seasoning as needed.
  • Serve with crackers or even some vegetable sticks.
