Roasted Ratatouille

So, you've been to the vegetable market a week ago and you bought a whole bunch of vegetables which are now sitting in your fridge and you have no idea what to do with them. If among your veggies, there are eggplants and tomatoes then you are lucky because these two ingredients make a perfect, easy and delicious roasted ratatouille. You can add capsicum, onion, garlic, zucchini, potato, or whatever other vegetable you have on hand.

The eggplant and tomato will release juices that will cook the other vegetables and you will have a perfect side dish, lunch, or snack that you will love.



Preparation Time: 5 minutes
Cooking Time: 35-40 minutes
Makes: 4 servings

Ingredients
5 or 6 eggplants
1 large tomato
2 butter capsicums
2 cloves of garlic
2 tablespoons of extra virgin olive oil
Salt to taste

Method
Prepare your ingredients.



Slice the vegetables in thick long strips and place in an oven-baking dish.

Dice the garlic and add to the baking dish along with oil.



Coat the ingredients evenly in the oil.



Bake in the oven for 20 minutes and then turn the vegetables, making sure that everything is cooking evenly.



When everything is cooked, stir again to make sure the vegetables have soaked up all the juices.
