Roasted Red Onions
This is a very simple recipe. It makes a great side to go along with a roast. We had ours with cured pork loin. The onions are a good balance against a salty meat.

Makes: 4 servings
Ingredients
12 small red onions
1 1/2 tbsp olive oil
1 1/2 tbsp Balsamic vinegar
Maple syrup (optional)
Method
Preheat the oven to 180°C/160°C fan.
Cut a small amount off the top of each onion, about 1 cm and peel off the skins.
Put the onions in roasting tin. It's better if you have a tin in which they will all fit snugly, but don't worry if you can't.
Drizzle the onions with the oil and vinegar and then season with salt and pepper.
Using your hands, roll the onions around in the oil and vinegar to ensure they are completely coated.
Cover with tin foil and put in the oven.
Id run out of tin foil, so I improvised with this disposal baking tray
Roast for 40 minutes.
Take out of the oven, remove tin foil.
Optional: drizzle with the maple syrup.
Put the onions back in the oven (without replacing the tin foil) and roast for another 20 minutes.
