Roasted Red Onions

This is a very simple recipe. It makes a great side to go along with a roast. We had ours with cured pork loin. The onions are a good balance against a salty meat.



Preparation Time: 10 minutes
Cooking Time: 1 hours
Makes: 4 servings



Ingredients
12 small red onions
1 1/2 tbsp olive oil
1 1/2 tbsp Balsamic vinegar
Maple syrup (optional)

Method
  • Preheat the oven to 180°C/160°C fan.
  • Cut a small amount off the top of each onion, about 1 cm and peel off the skins.




  • Put the onions in roasting tin. It's better if you have a tin in which they will all fit snugly, but don't worry if you can't.
  • Drizzle the onions with the oil and vinegar and then season with salt and pepper.



  • Using your hands, roll the onions around in the oil and vinegar to ensure they are completely coated.



  • Cover with tin foil and put in the oven.

  • Id run out of tin foil, so I improvised with this disposal baking tray


  • Roast for 40 minutes.
  • Take out of the oven, remove tin foil.



  • Optional: drizzle with the maple syrup.
  • Put the onions back in the oven (without replacing the tin foil) and roast for another 20 minutes.
