Roasted Snack Mix with Chickpeas Nuts and Spices

Healthy, satisfying snacking isn't about giving up all your delicious faves, like roasted, salted nuts.

It means looking for easy tweaks to make them more nutritious (and often more delicious!)

This crunchy snack mix tastes best soon after roasting which won't be a problem - it won't last that long.

Preparation Time: 2 minutes
Cooking Time: 60 minutes
Makes: 10 servings

Ingredients
400g chickpeas (tinned, or cooked in advance from dried chickpeas)
2 teaspoons cumin
2 teaspoons coriander powder
1 teaspoon curry powder
1 teaspoon paprika
1/2 teaspoon salt
1 cup almonds
1/4 cup sultanas
Spray oil

Method
  • Preheat oven to 150 degrees Celsius.

  • Chickpeas and spices

  • Mix chickpeas (rinsed and drained) and spices in a bowl.
  • Spread evenly over a baking tray. Spray lightly with oil.
  • Bake for 45 minutes.


  • Add almonds and pepitas. Roast for another 10 minutes.


  • Allow to cool for a few minutes then combine with sultanas and munch away.
