Roasted Stuffed Pears with Ricotta Cream
This decadent tasting but very low-fat and healthy dessert will surprise everyone who tucks into this winter warming dish. I haven’t always been fond of pears but roasting brings out a crispy and caramelised taste and texture to the pear. When combined with prunes, pine nuts and honey, the rich vibrant flavours seep into the pear’s flesh creating absolute culinary bliss. Top with a little Ricotta Cream
and you know you’ve made it to heaven.
Roasted Stuffed Pears served with Ricotta Cream.
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 2 servings
100g Pitted Prunes
4 Tablespoons Pine Nuts
4 Tablespoons Honey
100g Ricotta Cream
Cut a Pear in half and scoop out the core and seeds and a little of the flesh.
Combine the chopped pitted prunes, pine nuts and honey to make the stuffing.
Stuff the pears with the prune mixture.
Roasted Stuffed Pears garnished with a sprinkle of coconut.
