Roasted Yellow Capsicum and Butter Bean Dip

The smoky-sweet flavor of roasted capsicum makes the perfect combination with creamy butter beans in this Mediterranean dip. It is a great addition to a tapas-style spread. Serve with crunchy vegetables like carrot, zucchini or broccoli, and crispy bread or crackers for dipping.



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 8 servings

Ingredients
1 tbsp. tumeric
1 can butter beans
1 yellow capsicum
1-4 large garlic cloves - depending on preference
2 tablespoons olive oil (optional)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Spring onions to serve

Method
  • Place the deseeded capsicum and garlic cloves on an oven tray and bake for 20 minutes at 200C. Once the capsicum skin has browned and bubbled remove.
  • Blend the drained butter beans with the spices.

  • Once the capsicum is cool enough to handle peel and place the pieces in the blender with the garlic cloves. Process until smooth.
  • With processor on, slowly add oil through food chute if it needs help blending.

  • Serve with cut-up vegetables or toasted pita wedges and garnish with spring onion.
