Roasted Yellow Capsicum and Butter Bean Dip
The smoky-sweet flavor of roasted capsicum makes the perfect combination with creamy butter beans in this Mediterranean dip. It is a great addition to a tapas-style spread. Serve with crunchy vegetables like carrot, zucchini or broccoli, and crispy bread or crackers for dipping.

Makes: 8 servings
Ingredients
1 tbsp. tumeric
1 can butter beans
1 yellow capsicum
1-4 large garlic cloves - depending on preference
2 tablespoons olive oil (optional)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Spring onions to serve
Method
Place the deseeded capsicum and garlic cloves on an oven tray and bake for 20 minutes at 200C. Once the capsicum skin has browned and bubbled remove.
Blend the drained butter beans with the spices.
Once the capsicum is cool enough to handle peel and place the pieces in the blender with the garlic cloves. Process until smooth.
With processor on, slowly add oil through food chute if it needs help blending.
Serve with cut-up vegetables or toasted pita wedges and garnish with spring onion.
