Rocket and Marinated Fig Salad

I was given some figs and as they do not last long, I wanted something that I could easily make that night.

This salad was easy and the flavours were delicious, and well worth buy a few figs for.

Preparation Time: 10 minutes 30 minutes standing
Cooking Time: 0 minutes
Serves: 2

Handful of rocket - about a cup
5 fresh figs
2 tbsp olive oil
1½ tbsp balsamic vinegar
½ tbsp honey
¼ tsp Dijon mustard
About 1 tbsp blue cheese, crumbled
About 1 tbsp walnuts, chopped

Combine the olive oil, balsamic vinegar, honey, and Dijon mustard plus a tiny bit of salt in a bowl.

Whisk until it is well mixed.

Cut the figs in halves - I used more as mine were quite small.


Add the figs and gently stir to coat them.

Leave it to stand for about 30 minutes at least.


Put the figs on top of the rocket, and drizzle with a small amount of the marinade.


Top with the blue crumbled blue cheese and walnuts - you CAN use more of these two if you wish.

Take care not to use too much blue cheese or it will take over the flavour of the salad.
