This layered dessert is a play on Rocky Road.
Cake, chocolate chips and jam are combined and then layered with marshmallows, strawberries and a warm chocolate marshmallow. This is then topped with coconut and peanuts.

Ingredients
2 cups cake, crumbled (gluten free if required) (I used vanilla, see
Tips)
1/3 cup chocolate chips (or cacao chips)
1/3 cup strawberry jam
1 cup milk (lactose free if required)
1 cup marshmallows
1 tbsp cornflour
1 egg, beaten
1 tbsp vanilla essence
4 tbsp cocoa or cacao powder
1 cup cut strawberries
1/4 cup peanuts
Desiccated coconut, to serve (optional)
Method
Combine the cake, jam and chocolate chips in a bowl and set aside.

The combined cake, jam and chocolate chips will be crumbly
Put the milk, 1/2 cup marshmallows and cocoa into a saucepan on medium heat and stir until the marshmallows melt.
Add the cornflour and whisk for 2-3 minutes until the milk forms tiny bubbles on the outside of the saucepan rim. Do not let the milk boil. Remove from the heat.
Take 2 tbsp of the chocolate mixture and add to the eggs. Whisk to combine.
Pour the egg mixture into the chocolate mixture slowly but steadily, whisking as you pour as the mixture thickens. Whisk for 2 minutes.

Whisk continuously to prevent lumps
Layer the dessert by placing 1/4 cake mixture, 1/4 of the strawberries, 1/4 chocolate, remaining marshmallows into the glasses. Repeat layering until the mixtures have been used.
Sprinkle the nuts and desiccated coconut on top and serve.
Tips
Jam can be substituted with port wine jelly.
