Rolled Oats Crumble Bars With Fresh Strawberries
Yummy strawberry slice
Strawberries are in season at the moment, and they are both healthy and cheap.
This recipe is ideal to make now, and the taste is excellent as the strawberries have a slightly tart taste when baked.
I used coconut sugar instead of ordinary brown sugar as this is not actually sugar, and therefore not as sweet, and far healthier than processed sugar. It is available at health food and organic stores.

Makes: About 20 slices
Ingredients
FOR THE BASE
3 cups rolled oats
1 cup plain flour
1 cup coconut sugar
1 tsp baking soda
½ tsp cinnamon
½ tsp salt
225 g unsalted butter, melted
¼ cup boiling water
FOR THE FILLING
500 g strawberries
¼ cup coconut sugar
2 tbsp plain flour
1 tbsp lemon zest
½ tsp ground cinnamon
¼ cup fresh lemon juice
Method
Preheat the oven to 180°. Line a 30 x 23 cm baking pan -I used a glass one with baking paper, or alternatively spray lightly.
Put the rolled oats, flour, brown sugar, baking soda, cinnamon and salt in a large bowl and mix.
Add the melted butter and boiled water and stir until well mixed.
Press about three quarters of this mixture into the baking pan and even it slightly with your fingers.
Bake in the oven for 10 to 12 minutes or until golden brown. Remove from oven and let cool completely.
For the filling - Mix the brown sugar, flour, lemon zest and cinnamon in a bowl.
Cut the strawberries into quarters.
Add the strawberry mixture and mix to combine.
Spoon this filling mixture over the cooled base.
Sprinkle the reamining base mixture over the top of this.
Bake for 30 to 35 minutes until the top is brown and the strawberries are tender.
Let cool completely and then cut into squares and serve. Add a dollop of cream to give an even better taste.
