Grilled plantain/banana is my all time favourite snack. It's significantly healthier than the fried versions you can buy in shops, and is full of fibre and gives you a boost of energy making it ideal for breakfast or as a healthy snack.
Preparation Time: 2 minutes
Cooking Time: 6 minutes
Makes: 2 servings
Ingredients
Tsp coconut oil
2 ripe plantain/banana
Rosemary sprig
Method
Line some grease proof paper/ foil with the oil. Peel the banana, add to the greased paper, and place under a hot grill for 2 minutes.
Remove the grill rack and add the rosemary. Place the banana back under the grill for one minute.
Turn the banana over and repeat the previous step.
Remove from the grill and serve immediately.
