Rosemarystuffed Roast Chicken

Roast chicken can be as simple or as extravagant as your seasoning. Keeping it relatively simple, however, is often one of the easiest ways of ensuring a meal can be shared and enjoyed countless times. Rosemary-stuffed roast chicken is just that.

Preparation Time: 2 minutes
Cooking Time: 1 hour 30 minutes
Makes: 6 servings

Ingredients
1 large chicken
5 sprigs of Rosemary
5 sprigs of thyme
5 garlic cloves
3 glugs of olive oil
Tsp crushed black pepper

Method

  • Place the chicken in a baking tray and coat with all of the seasoning and oil.



  • Place in the oven for one hour and 30 minutes at 180 degrees.



  • Halfway through cooking turn the chicken over, for even cooking and place back in the oven for the remaining time.



  • Once cooked, remove the chicken from the oven.



  • Pour any juices left at the bottom of the tray over the chicken.

  • Slice/tear or pull off any pieces of chicken you wish to enjoy, serve with sides and tuck in.
