Roti

Indian flat breads or roti. The roti gets puffed up when exposed to dry heat like that of the a direct flame and puffs up. This is also called phulkas.

Preparation Time: 8minutes
Cooking Time: 6 minutes
Makes: 2 servings

Ingredients
250g (1 cups) whole wheat flour
1/4 teaspoon salt
125ml (1/2 cup) chilled water
10g butter.


Method
●Combine the flour, butter and salt in a large bowl.
●Add the water and stir to combine.




●Use your hands to bring the dough together in the bowl.
●Turn onto a lightly floured surface and knead for until smooth.




●Place a moistened cloth or paper towel over the mixing bowl and set aside for an 5 minutes.
●After 5 minutes heat up a pan.
●Flatten the dough into a disc and cut into 4 equal portions.
● Use a lightly floured rolling pin to roll out 1 portion of dough and place on the hot pan.




●Once you see there are brown spots on the under side, flip it over.
● Once flipped air will start filling up.




●You want to lightly press down with a dry handkerchief on the areas filling up so as to encourage the air to pass through the entire roti.


●If there is any tear or hole, press the handkerchief it so the air doesn't escape.
●The air or the puff ensures that the bread is light and soft but even if it doesn't puff up entirely, it is going to be delicious.

Repeat with the remaining dough portions.
