Rum Dog
No, a rum dog is not a boozy sausage in a bun. In fact it is a steamed pudding originating from the Lake District, where the term 'dog' used to be slang for suet. The original version did not use egg or butter, but here, the addition makes the pudding lighter. I've also used a fruit loaf to make it more special. If are a vegetarian, or do not like using suet, then you can simply leave it out, and it will not affect the overall outcome.

Cooking Time: 2 - 2 ½ hours
Makes: 5 servings
Ingredients
85g self-raising flour
85g suet
170g barm brack (
homemade or shop bought)
40g butter
110g raisins
100ml Rum
1 egg
Method
Soak the raisins in rum for two hours, and then drain (retain three tablespoons rum).
Tear up the barm brack, and put it in a food processor for a chunky breadcrumb consistency.
Mix the breadcrumbs with flour, suet, raisins, and three tablespoons rum.
Beat in the butter.
Beat in the egg, and then spoon the mixture into a greased pudding basin.
Steam over boiling water until cooked through.
Take the pudding out of the basin and serve.
