Rum Raisin Cookies

You might associate rum & raisin as one of your favourite ice cream flavours, but for those days when you don't want something cold, these one-bite-sized cookies make a tasty treat for grown ups.

Preparation Time: 1 hour 20 minutes
Cooking Time: 12 minutes
Makes: 35 servings

Ingredients
100ml dark rum
65g raisins
60g margarine
1 tbsp Truvia sweetener (or 70g caster sugar)
1 egg
110g wholemeal plain flour
1tsp vanilla extract
1tsp orange oil
1tsp baking powder

Method
  • Pre-heat oven to 180& #3872 ;C/160& #3872 ;C fan/350& #3872 ;F/4 Gas.



  • Soak the raisins in rum for about an hour, and then drain (retain some of the rum).



  • Cream the margarine with the sweetener/sugar.



  • Beat vanilla extract, orange oil, and one teaspoon rum, into the egg, and then combine with the creamed margarine.
  • Stir in the raisins.



  • Mix the flour and baking powder together, and then fold into the mixture.



  • Drop teaspoon size cookies onto a baking tray.



  • Bake in the oven for 12 minutes.
