I recently enjoyed pickled cucumber served aside my salmon fillet at a restaurant with friends. It was so delicious that I thought I'd whip it up at home, in a bid to recreate the fresh and zingy side dish of my main.

Makes: 2 servings
Ingredients 1 cucumber
3 tbslp red wine vinegar
Wash the cucumber and using a peeling knife, peel the skin into a bowl. Ideally, once you've peeled most of the skin off stop - the soft seeded core of cucumber does not make for successful ribbons.
Once peeled you should have a bowl of thin, flat, cucumber strips.
Squeeze over the lemon.
Add the vinegar.
Arrange into a pretty-looking ribbon molehill and serve.
