Rustic Mediterranean Salad
This recipe creates a fantastic cold pasta dish. It is the perfect combination of textures, tastes and smells. The pecans add crunch whilst the feta adds a sharp yet creamy edge.

Makes: 4 servings
Ingredients
400 g dry penne
225 g marinated artichokes
75 g sun dried tomatoes
15 black olives
1/3 red onion
70 g Australian feta
1 bunch fresh basil
2 garlic cloves
15 pecans
2 tbsp oil
Method
Cook the penne via packet instructions, drain and set aside to cool.
In a blender blitz the basil (save a few small leaves for garnish), garlic and oil until you have a smooth paste. Add more oil if needed.
Pour the basil sauce over the pasta.
Roughly chop the sundried tomatoes, artichokes, olives, and onion, add to the pasta and combine well.
Crush the pecans and sprinkle over the pasta with the crumbled feta. Garnish with the basil leaves, season with salt and pepper and enjoy.
