Rustic Mediterranean Salad

This recipe creates a fantastic cold pasta dish. It is the perfect combination of textures, tastes and smells. The pecans add crunch whilst the feta adds a sharp yet creamy edge.



Preparation Time: 20 minutes
Cooking Time: 13 minutes
Makes: 4 servings

Ingredients
400 g dry penne
225 g marinated artichokes
75 g sun dried tomatoes
15 black olives
1/3 red onion
70 g Australian feta
1 bunch fresh basil
2 garlic cloves
15 pecans
2 tbsp oil



Method
  • Cook the penne via packet instructions, drain and set aside to cool.

  • In a blender blitz the basil (save a few small leaves for garnish), garlic and oil until you have a smooth paste. Add more oil if needed.

  • Pour the basil sauce over the pasta.


  • Roughly chop the sundried tomatoes, artichokes, olives, and onion, add to the pasta and combine well.



  • Crush the pecans and sprinkle over the pasta with the crumbled feta. Garnish with the basil leaves, season with salt and pepper and enjoy.
