Rustic Tomato Brushetta with Garlic Infused Olive Oil
Fresh tomatoes, bursting with flavour are the taste of summer for me. There are lots of different varieties now and I love to mix a few up to make a tomato bruschetta as a tasty starter or snack. This is a really simple recipe and great for using up slightly stale French bread.
I've not given exact quantities as you can do this all by eye depending on the number of people you are catering for.

Ingredients
Selection of fresh tomatoes (the great tasting ones have a great tomato smell)
Olive oil
Garlic
Fresh basil
French bread
selection of tomatoes picked up from a French farmers market
Method
Roughly chop the tomatoes in cubes.
Crush a couple of cloves of garlic and place in a bowl with around four tablespoons of olive oil and the heat for 30 seconds in a microwave.
Coat the tomatoes liberally in olive oil and mix through torn basil leaves.
Slice the French bread, brush over olive oil and toast slightly on a grill or bbq.
Heap the tomatoes onto the French bread slices and serve.
Brushetta is traditionally made by grating garlic over the crisped bread but I love this alternative technique of infusing the oil with the garlic.
