Saganaki Cheese with Parsley and Lemon

Saganaki is a smooth, velvety cheese that works wonderfully as the centrepiece of a meal. If you're a fan of haloumi, you'll love this cheese, and it only takes 5 minutes to cook. We served it with a garden salad and lightly salted green beans. You could also have a side of grains such as coucous or quinoa.



Preparation Time: 5 minutes
Cooking Time: 5 minutes
Serves: 2-4

Ingredients
200g saganaki cheese
Juice of 1 lemon
1/2 small bunch parsley, chopped

Method
  • Lightly coat the saganaki in olive oil.
  • Heat a pan over a medium-high heat. Place the saganaki and fry for a few minutes, until golden brown, then turn and fry the other side for another few minutes.



  • Place on a plate. Pour over the lemon juice and parsley. Serve immediately.
