Sago Plum Pudding

A lighter alternative to the traditional plum pudding, this is a Christmas treat or an anytime treat. Best made 24 hours in advance. To make this gluten free just use gluten free bread instead.



Preparation Time: 15 minutes (plus 30 minutes standing time)
Cooking Time: 2 1/2 hours
Makes: 6 servings

Ingredients
3 slices of bread (use gluten free bread for a gluten free dessert)
1 cup milk
2 tablespoons sago
1/2 cup sugar
1 tablespoon lemon peel
1 cup sultanas and raisins
1/4 teaspoon nutmeg
1/2 level teaspoon bicarb soda
1 teaspoon cold water
1 egg




Method
  • Place your bread slices into the food processor and whizz until it turns into crumbs.

  • Heat milk in a small saucepan on the stove, or alternatively in the microwave.

  • Measure out 1 cup of the breadcrumbs and place in a bowl with the sago and the butter. Pour the warm milk on top.

  • Allow to stand for 30 minutes.

  • Add the sugar, fruit and nutmeg and mix.



  • Dissolve the bicarb in cold water and add to the mixture.

  • Beat the egg and stir in lightly but thoroughly.


  • Pour into a greased basin and steam for 2 1/2 hours.



  • Pull out of the steamer and allow to cool down slightly. Turn out onto a plate for serving.



  • Serve with custard or cream.
