Sago Plum Pudding
A lighter alternative to the traditional plum pudding, this is a Christmas treat or an anytime treat. Best made 24 hours in advance. To make this gluten free just use gluten free bread instead.
Preparation Time: 15 minutes (plus 30 minutes standing time)
Cooking Time: 2 1/2 hours
Makes: 6 servings
Ingredients
3 slices of bread (use gluten free bread for a gluten free dessert)
1 cup milk
2 tablespoons sago
1/2 cup sugar
1 tablespoon lemon peel
1 cup sultanas and raisins
1/4 teaspoon nutmeg
1/2 level teaspoon bicarb soda
1 teaspoon cold water
1 egg
Method
Place your bread slices into the food processor and whizz until it turns into crumbs.
Heat milk in a small saucepan on the stove, or alternatively in the microwave.
Measure out 1 cup of the breadcrumbs and place in a bowl with the sago and the butter. Pour the warm milk on top.
Allow to stand for 30 minutes.
Add the sugar, fruit and nutmeg and mix.
Dissolve the bicarb in cold water and add to the mixture.
Beat the egg and stir in lightly but thoroughly.
Pour into a greased basin and steam for 2 1/2 hours.
Pull out of the steamer and allow to cool down slightly. Turn out onto a plate for serving.
Serve with custard or cream.
