Salmon and Camembert Strata Vegetarian Pudding
A strata is usually a layered dish that uses eggs, bread and cheese.
I bought [link http://reviewclue.com.au/hot-smoked-salmon-by-superior-gold/ pepper smoked salmon], and this is already cooked/smoked and in a blister pack.
Added to this was a round of Camembert cheese and eggs, and this dish was delightful - quite unusual, and would be great for a dinner party - just remember to grease the dish well before you bake it, as mine stuck to the dish!
Preparation Time: 20 minutes plus fridge for 8 hours
Cooking Time: 55 minutes
Serves: 4 - 5
Ingredients
1 pack (125 g) [link http://reviewclue.com.au/hot-smoked-salmon-by-superior-gold/ hot salmon] or similar
1 round 125 g [link http://reviewclue.com.au/unicorn-camembert-cheese/ Camembert cheese] or Brie would work well
250 g loaf bread, cubed
½ cup Parmesan cheese, grated
4 large eggs
2 cups Hi Lo milk
Method
Preheat the oven to 180°/160° fan forced. Grease a baking dish well - I used Corning Ware. When choosing a dish, make sure it is a high one as this dish rises to almost twice it's original size.
Cut the cheese into cubes.
Layer the bread and Camembert in the baking dish.
Add the flaked salmon
Than add the Parmesan.
Mix the eggs and the milk and pour this over the salmon mixture.
Cover and put in the fridge for up to 8 hours.
Bake, uncovered for about 55 minutes or until it is set.
Cut into slices or pieces and eat!
I served it with my fettucine and sun-dried tomatoes though that was a bit much, and next time I would just have a salad with it.
