Salmon Fettuccine with a Creamy Lime Sauce
This recipe is made with fresh Tasmanian salmon, one of the best fish for health reasons, and it is delicious with the creamy texture and a hint of lime.

Cooking Time: 20 minutes
Makes: 3 servings
Ingredients
155 - 175 g fettuccine
1 tbsp olive oil
2 salmon fillets, skinless
40 g onion, chopped finely
1 small garlic clove, crushed
1 tsp lime rind, finely grated
½ tbsp lime juice
30 ml dry white wine
150 ml cream
Method
Cook the pasta as per packet instructions. Drain.
Meanwhile, while the pasta is cooking, heat some of the oil in a wok or similar.
Cook the fish until it is browned on both sides - this should take about 3 minutes on each side, depending on the thickness of the fish. do NOT overcook.
Put the fish in a bowl and flake it into medium sized pieces.
Heat the remaining oil in the same pan and cook the onion and garlic until the onion softens.
Add the lime rind, juice and the wine, and bring to the boil.
Cook, stirring until the liquid reduces to about a tbsp. Stir in the cream and some salt and pepper, and return to the boil.
Remove from the heat.
Add the fettuccine, and fish to the sauce, or else serve the fettuccine, with the fish on top, and covered with the sauce.
Toss it gently before serving. I served it with a lovely broccoli, bacon and cranberry salad.
