Salmon Fettuccine with a Creamy Lime Sauce

This recipe is made with fresh Tasmanian salmon, one of the best fish for health reasons, and it is delicious with the creamy texture and a hint of lime.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 3 servings

Ingredients
155 - 175 g fettuccine
1 tbsp olive oil
2 salmon fillets, skinless
40 g onion, chopped finely
1 small garlic clove, crushed
1 tsp lime rind, finely grated
½ tbsp lime juice
30 ml dry white wine
150 ml cream

Method
  • Cook the pasta as per packet instructions. Drain.

  • Meanwhile, while the pasta is cooking, heat some of the oil in a wok or similar.

  • Cook the fish until it is browned on both sides - this should take about 3 minutes on each side, depending on the thickness of the fish. do NOT overcook.

  • Put the fish in a bowl and flake it into medium sized pieces.


  • Heat the remaining oil in the same pan and cook the onion and garlic until the onion softens.

  • Add the lime rind, juice and the wine, and bring to the boil.


  • Cook, stirring until the liquid reduces to about a tbsp. Stir in the cream and some salt and pepper, and return to the boil.

  • Remove from the heat.

  • Add the fettuccine, and fish to the sauce, or else serve the fettuccine, with the fish on top, and covered with the sauce.


  • Toss it gently before serving. I served it with a lovely broccoli, bacon and cranberry salad.
