Salmon Fillet with Leek and Carrots

This is the perfect recipe for when you are too broke to take someone special out for dinner and you really want to leave a good impression, but you can't even cook.



Well, you really don't have to be a five star chef for this quick and easy recipe. Slicing up the veggies is by far the most difficult task.

And cooking this delicious dish for two will cost you only about $15.

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients

2 Salmon fillets ( 125g each)
1 Leek
5 Carrots
1 Cup of rice
1 Glass white wine
1-4 tsp stock powder
Salt
Pepper
Olive oil
Water

Method
  • Wash leek and carrots and slice them. Rinse the salmon fillets, dry them and salt and pepper them on both sides. Cook the rice in the rice cooker.

  • Sauté the leek and carrot slices in a large frying pan in the olive oil for about three minutes, then pour about one glass of white wine in the pan and add two cups of water. Wait till it simmers and then add the stock powder, according to taste. Place the salmon fillets on the leek carrot bed, close the lid and let it simmer on low heat for ten minutes. Do not open the lid before the ten minutes are over as the steam will cook the fish.



  • The salmon will be perfectly cooked, but you can carefully slice the fillets in half just to make sure they are not undercooked, before serving.
