Salmon Ginger and Soy Parcels

Delicious, foolproof and healthy salmon is my go to when we have guests over and I want to make something simple, quick but tasty.

The salmon is layered with ginger, shallots, soy sauce and baked in parcels. Bake straight away or make the parcels ahead and place in the fridge until you are ready to cook, so you can relax with your guests. It tastes sensational with rice and a fresh salad.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4

Ingredients
4 salmon fillets
12 cm ginger, grated
8 tbsp soy sauce
1 bunch shallots, sliced
Jasmine rice, to serve
Salad, to serve

Method
  • Preheat the oven to 220 degrees. Cut four 40 cm sheets of foil and baking paper. Spread the foil on the bench.
  • Scrunch each piece of baking paper into a loose ball and wet under a tap. Unfold the wet baking paper and place flat on top of each piece of foil. This will help steam the salmon.
  • Place the salmon fillets in the centre of the baking paper.
  • Spread 3 tbsp ginger on top of the salmon. Place a handful of shallots on top of the ginger.

  • Drizzle 2 tbsp of soy sauce on each salmon fillet.
  • Fold the bottom, top and then sides of the baking paper to form a parcel.

  • Repeat with the foil, place on a baking tray. The parcels can be placed in the fridge until you are ready to bake.

  • Bake the salmon for 12 - 15 minutes, until cooked.
  • Take the salmon out of the oven and open the parcels. Be careful of the steam. Serve the salmon in open parcels or use a knife to slide the salmon on to a plate.
  • Serve the salmon with a side of salad and rice.
