Salmon Nuggets
A quick, easy midweek meal, lunch or snack for young children, these salmon nuggets are tasty, full of healthy omega 3 and a hit with even the fussiest of eaters.
The cheese breadcrumbs make the nuggets extra tasty but you can leave the cheese out if preferred.
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 10-15 nuggets
Ingredients
2 skinned salmon fillets
2 slices bread
2oz grated cheddar cheese
4 tsp grated Parmesan cheese
1 beaten egg
2 tbsp flour
Pinch of pepper
Method
Lightly toast the bread, break up into chunks and place in a blender. Whizz the bread into breadcrumbs and then add the cheddar and Parmesan before whizzing for another minute to blend.
Cut the salmon fillets into small cubes, I usually make 5 nugget pieces per fillet.
Put the beaten egg, flour and cheese breadcrumbs into separate shallow dishes. Add a little pepper to the flour.
Roll each piece of salmon in the flour, dip and roll through the egg and then coat thouroughly in the breadcrumbs. Continue this process until each piece is coated.
To cook, place on a baking tray and cook on 200c (180c for fan ovens) for 5-6 minutes until golden and cooked through.
To freeze, place in a freezer bag and lay flat in freezer and then cook directly from frozen, adding an extra two minutes to cooking time.
