Salmon On Beets And Greens
Salmon needn't be a fancy meal, it can be lightly spiced for one and dressed up with nutritious vegetables for a light and delicious meal, easily done in 10 minutes after work.
Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 1 serving
Ingredients
1 salmon fillet
Thumb of grated fresh ginger
Half tsp black pepper
Half a beetroot
Fresh spinach
Fresh cavolo nero
Juice of half a lemon
2 carrots
Method
Place the salmon fillet under the grill for 10 minutes at a medium heat.
After 5 minutes turn the fillet over (skin side down) and add the ginger and pepper. Cook for the remaining time.
Tear the kale into small pieces and transfer to a bowl, grate the beetroot and carrot on top and season with the pepper and lemon.
Top the bowl with the salmon and tuck in.
