Salmon Rissoles

Salmon rissoles are a delicious combination of salmon and potato, which I believe has got to be a match made in heaven. I love these served as a main with salad or as a sandwich.


Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 8

Ingredients
415 g tin of salmon, drained
250 g mashed potato, cold
1/2 cup breadcrumbs
1 egg
1 tsp salt
1 tbs oil

Method
  • Place the mashed potato, salmon, egg and salt into the bowl and mix well to combine.

  • Shape the mixture into 8 rissoles and roll each rissole in the breadcrumbs until covered.
  • Let rissoles rest in the refrigerator for 60 minutes before heating the oil in a frypan over medium heat.
  • Cook each rissole for 4 minutes each side until golden and heated through.

  • Serve with salad, on a roll, or, as a sandwich.
