Salmon Scramble

Breakfast is the most important meal of the day and nothing beats a homemade cafe-style breakfast. With the perfect combination of a few key ingredients whipping up a scrumptious salmon scramble is available for everyone.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes:1 serving

Ingredients
2 Free range eggs
1-2 slices of bread
1/2 an avocado
2 tbsp Kewpie mayonnaise
Handful or watercress
5 chive strands
2 tbsp milk
Salt and pepper to serve
Oil for cooking



Method
  • Combine the eggs, snipped chives, milk and seasoning in a small bowl. Whisk the eggs until they bubble.



  • Put your bread on to toast.

  • Pour the egg mixture into a hot oiled pan and stir continuously with a metal spoon until the eggs are your desired consistency - set aside.



  • Time to assemble. Slice the avocado and layer on the toast with the salmon. Scoop the scrambled egg on top then garnish with watercress and Kewpie mayonnaise.

  • Enjoy your cafe-style breakfast at home!
