Salmon with Kale and Apple Salad
Salmon is the healthiest fish, and if you do not overcook it, it is also a delicious fish and very versatile.
I simply seared it in the pan here and served it with an unusual but also delicious salad.
Preparation Time: 15 minutes plus standing time
Cooking Time: 10 minutes
Serves: 1 - 2
1 piece salmon, skin on
1 tbsp lemon juice
1 tbsp olive oil
1½ cups kale, ribs removed, thinly sliced
About 1½ tbsp dates
About ¼ cup Parmesan cheese
1½ tbsp toasted almonds (under grill for a few minutes)
Serve with the salad and chips - optional.
