Salmon with Lemon and Capers
This extremely simple and fast recipe is also absolutely delicious. The combination of lemon and capers together with the texture and taste of the salmon and dill will have your family asking for seconds.

Makes: 4 servings
Ingredients
4 Salmon fillets with skin on
1 Tablespoon fresh dill sprigs or stir in paste
2 Medium lemons, thinly sliced
1 Tablespoon drained baby capers
2 Tablespoons lemon juice
Spring onion for garnish
Method
Preheat oven to 200 degrees C
Place salmon on large piece of aluminium foil
Top each salmon with one quarter of the dill, lemon, capers and lemon juice.
Season with salt and pepper.
Fold aluminium foil to enclose the filling.
Place on baking tray.
Bake for 12 minutes or until salmon is just cooked through.
Serve with mashed potatoes or salad.
Sprinkle with chopped spring onions.
