Salsa Style Mint and Tomato Sauce
The inspiration for this sauce has been taken from salsa sauce. It’s great in summer with barbecues and makes a great dip for bread sticks.
Preparation Time: 5 minutes
Makes: 3 servings
Ingredients
4 vine tomatoes (or 2 plum tomatoes)
10g mint leaves
A few sprigs of coriander
1 small chilli
1 small garlic clove
1 tbsp olive oil
Salt and black pepper
Method
Take the tomatoes cut them in to 3 pieces and put them in a food chopper.
Add the mint leaves, coriander, garlic and chilli.
Blitz all the ingredients together. The length of time you do this for depends on how smooth you want the sauce. If you like the tomato to remain chunky then blitz it in pulses until you have the preferred texture.
Pour the sauce into a serving dish and add 1 tbsp of olive oil. Season with salt and black pepper and mix together.
This sauce will keep until the next day if kept refrigerated. If you make the sauce very runny some lemon juice can be added, it can then be poured over a mixed salad to liven it up. Enjoy!
