I try to eat salmon every few weeks as it is supposedly one of the healthiest fish due to the Omega 3.
Wasabi flavour was a delicious option with this fresh salmon which was from the tail of the fish.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 1
Ingredients
1 x 220 g salmon fillet, skin on
½ tsp sea salt
½ tsp pepper
15 ml oil
For the mayonnaise
35 g mayonnaise
½ tsp wasabi paste, or to taste
½ tsp coriander, chopped
¼ tsp lime juice
Method
Combine the salt and pepper and HALF the oil and fish in a bowl.
Cover and let it stand for 5 minutes while you make the mayonnaise.
Combine the ingredients in a small bowl.
Heat the remaining oil in a frying pan, cook the salmon, skin side down, until this skin goes crispy (about 3 -5 minutes depending on thickness)
Turn and cook the other side for about 2 minutes - do not overcook salmon, as it should be slightly pink still inside.
Serve the fish with the wasabi mayonnaise and some lemon or lime.
I served it with some plain rocket and my potato boulangere.
