Salted Pistachio Brittle

This salty and sweet treat is quick to make and delicious on its own or served with ice cream or chocolate torte.



The brittle is very quick to make but needs to be done carefully to ensure the caramel isn't overcooked as this will give the brittle a burnt taste.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 12 servings

Ingredients
80g salted pistachio nuts
100g caster sugar

Method
  • Lightly oil a piece of baking paper, ready to pour the hot caramel on to. the oil will stop the hot caramel sticking.
  • Dry fry the pistachio nuts over a medium heat for approximately 3 minutes. Keep shaking the nuts to toast them evenly.

  • Place the toasted nuts into a pestle and mortar, grind the pistachios into small chunks.

  • Add the caster sugar to a clean frying pan and gently warm over a low heat. Swirl the sugar to stop it from burning but do not stir.
  • Small beads of caramel can be seen as the sugar begins to melt

  • Cook the sugar until it turns smooth and golden. Add the toasted nuts and swirl them around gently.


  • Pour the caramel onto the oiled baking paper and leave to cool before breaking into portions.
