Salvage Wrinkled Tomatoes

We've all done it, bought too many tomatoes with the intention of eating them, but they get relegated to the back of the fridge, and turn into wrinkled red balls that barely resemble the humble tomato.



Instead of wasting the cancer-fighting fruit, make use of any oil from the bottom of a roasting dish (I used the fat from the chicken thighs I'd just roasted), and turn the less-than-pretty tomatoes, into edible flavour-makers.

Preparation Time: 1 minute
Cooking Time: 30 minutes
Makes: 3 servings

Ingredients
6 tomatoes (any variety)
1 thyme Sprig
10 tblsp Chicken fat

Wrinkled tomatoes


Method
  • Wash the tomatoes.



  • Place in a bowl of chicken fat.



  • Season with the thyme.



  • You don't need any more seasoning because of the natural salts and sugars in the chicken fat. Any sort of fat from any meat works just as well.

  • Place in the oven for 30 minutes at 120 degrees/gas mark 2/3.



  • Garnish with fresh spinach if you like.



  • Serve as a side dish with both vegetarian and meat dishes.
