Sambal Chicken with Oyster Mushroom Tofu Puffs

Sambal Oelek is a Javanese chilli paste that is made from various chillies, shrimp paste, fish sauce, garlic, gingers, scallion, shallot, lime juice, sugar and vinegar. It is usually eaten with fried fish, chicken or as a dip for raw vegetables like cabbage and cucumber. You can also add it to a stir-fry to compliment the whole dish.



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
2 chicken breast fillets, cut into bite-size pieces
200g tofu puffs, cut each into 4 pieces
150g oyster mushroom, slice into thin pieces
1 bunch Chinese broccoli, cut into pieces
2 cloves garlic, finely chopped
1 tablespoon Sambal Oelek
2 tablespoons oyster sauce
1/2 teaspoon salt
1/2 teaspoon white pepper powder
Steamed jasmine rice, to serve



Method
  • Heat 2 tablespoons vegetable oil in a large saucepan.
  • Add in the chopped garlic and saute until fragrant.
  • Add in the sambal oelek and fry until fragrant.



  • Add in the chicken pieces and mix well until they are covered in sambal.
  • Stir fry for 5 minutes.



  • Mix in the oyster mushroom.



  • Mix in the tofu puffs.



  • Add in the salt, white pepper powder and oyster sauce.



  • Stir fry and mix well.



  • Add in the Chinese broccoli and pour in 1 cup of water.
  • Cover and bring to the boil.
  • Leave to steam for 5 minutes until the Chinese broccoli is just wilted.



  • Uncover and mix well.



  • Serve with steamed jasmine rice.
