Cooking tofu in a sandwich press is one of my current favourite cooking hacks. It is so fast and easy, requires no oil, no pan, and leaves the tofu nice and crispy. Add the sandwiched tofu to a stirfry or salad, or as I have here, stick the golden slabs into a sandwich.

Serves: 2
Ingredients
1/3 block of firm tofu
4 slices of sourdough
Large handful of kale or leaves of choice
1/4 avocado
1/2 red capsicum
2 tbsp tomato sauce (or relish)
2 tbsp mayonnaise**
1 tbsp nutritional yeast
Method
Cut a slabs of tofu and place them in a hot sandwich press. Put the lid down and leave to cook.
Meanwhile prepare your salad ingredients. Chop the capsicum and kale. Place alongside the tofu in the sandwich press to wilt slightly.
Pop your sourdough in the toaster and allow to lightly toast. Once ready spread half with avocado and half with mayonnaise.
Once golden remove the tofu from the sandwich press and place in your sandwich. Top with kale, capsicum, tomato sauce and nutritional yeast.
