Satay Chicken Quesadillas

A super tasty and simple meal to prepare for one or serve with salad as a meal for the whole family. These Quesadillas are very versatile as you can add in whatever extra fillings you like (however, you can't make a good Quesadilla without cheese).

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 2 servings

2 tortillas
1/2 tsp olive oil
1 small onion
300g chicken tenderloins or breast
1 cup baby spinach
3/4 cup grated cheese
3 Tbsp sweet chilli sauce
3 Tbsp peanut butter

The ingredients.

Preheat the oven to 180 degrees C.
Line a baking tray with baking paper and set aside.

Dice up the onion

Slice the chicken into small pieces.

Remember to clean the knife and chopping board well before cutting raw meat.

Heat oil in a fry pan over a medium heat. Add diced onions and cook, stirring, for 1-2 minutes until softened.

Add the chicken and continue to cook for 4-6 minutes until browned and cooked through.

Make sure not to over cook the chicken as it will become dry.

Add the sweet chilli sauce and peanut butter and stir through until the chicken is well coated. Turn off heat.

Taste the chicken mixture and add any more sauces if required.

Lay out the tortillas onto the lined tray. Spread spinach evenly over one half of each tortilla as shown.

Only spread the toppings on one half of the tortilla so you can fold it over.

Spoon the chicken mixture evenly over the spinach.

Sprinkle the cheese over the top of the chicken.

Fold over the tortilla, covering the fillings.

Place the quesadillas into the oven for 5-10 minutes until the cheese has melted and tortillas are brown and crispy.


Serve quesadillas with avocado and sour cream if desired.
