Satay Chicken Skewers

When I eat Thai at a restaurant, I love to start with satay chicken skewers and now I can make them at home, I can have them anytime.

Satay chicken skewers a tasty start to any three course meal


Preparation Time: 1 hour
Cooking Time: 8-12 minutes
Makes: 6-8 skewers

Ingredients
2 tablespoons of tamari soy sauce
2 tablespoons of lime juice
1 teaspoon of garlic minced
1/4 cup peanut butter
1/4 cup of water
2 chicken breasts

Method
  • Add all ingredients except for the water and mix well.
  • Slowly add in the water and continue adding until it reaches the consistency you want.
  • Dice chicken place in a bowl with the peanut sauce and mix to combine and coat all chicken really well.
  • Cover chicken and place in the fridge for up to an hour, the longer the better.
  • Push chicken pieces on to skewers and place on the grill.
  • Cook for 8- 12 minutes turning every few minutes so they don't burn.
  • After about 8 minutes take a skewer off the grill and take off some chicken and check if it's cooked in middle, if it's not cooked return it to the grill and continue cooking until they are all cooked all the way through.
  • Serve with some white rice or on its own as an entree
