When cooking Asian I usually do Thai food, but my other favourite has to be satay chicken. I had this out at dinner one night and I had to try make it for myself
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 4 serves
Ingredients
2 garlic cloves, finely chopped
3cm piece fresh ginger, peeled, finely grated
250ml (1 cup) coconut milk
2 tablespoons crunchy peanut butter
3 chicken breasts
2 cups of brocoli
2 carrots peeled and chopped
1 red capsicum sliced
Method
Sauté garlic and ginger in a pan.
Stir for three minutes and then add in milk whisking continuously.
Add in peanut butter and stir until well combined.
Cut chicken breast into strips and cook in a separate pan.
When chicken is cooked on the outside add it to the sauce to continue cooking.
Add in carrots and capsicum, then add in in the broccoli just before it's all cooked so it still has a bit of crunch.
When chicken is cooked right through it's ready to go.
Best served with some rice on the side.
