Satay Fried Quinoa

Quinoa is a seed, not a grain, making it gluten free and a perfect substitute for rice. Quinoa is a great source of complete proteins, has all the 8 essential amino acids, a good source of B vitamins, calcium, magnesium and iron. In short, the perfect food for any diet, child or post-workout recovery meal. This fried satay quinoa dish is something that you will quite possibly, become addicted to.

Preparation Time: 10-15 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients for Fried Quinoa Rice
300g dry quinoa
360g broccoli florets
8 button or swiss brown mushrooms (chopped)
1 medium carrot
150g frozen peas
freshly sliced chilli (to taste)
1 crushed garlic

To serve - optional
1 tablespoon sesame seeds
2 spring onions

Ingredients for Satay Sauce
120mL tamari (gluten free soy sauce)
60mL tahini (sesame seed paste)
60mL water
1 lime, juice
(Mix these together before cooking)

Method
  • Bring quinoa and 4 cups /1L of water to boil, stir occasionally.
  • Cook for 10 mins until tender.
  • Rinse and drain with sieve.



  • While the quinoa is cooking, into a wok or saucepan, add the broccoli, garlic, carrots and mushrooms. Simmer until vegetables are tender.
  • Add peas and satay sauce.
  • Add cooked quinoa to wok and stir through.
  • Serve with sesame seeds and spring onion.
