Satay Fried Quinoa
Quinoa is a seed, not a grain, making it gluten free and a perfect substitute for rice. Quinoa is a great source of complete proteins, has all the 8 essential amino acids, a good source of B vitamins, calcium, magnesium and iron. In short, the perfect food for any diet, child or post-workout recovery meal. This fried satay quinoa dish is something that you will quite possibly, become addicted to.
Preparation Time: 10-15 minutes
Cooking Time: 30 minutes
Makes: 4 servings
Ingredients for Fried Quinoa Rice
300g dry quinoa
360g broccoli florets
8 button or swiss brown mushrooms (chopped)
1 medium carrot
150g frozen peas
freshly sliced chilli (to taste)
1 crushed garlic
To serve - optional
1 tablespoon sesame seeds
2 spring onions
Ingredients for Satay Sauce
120mL tamari (gluten free soy sauce)
60mL tahini (sesame seed paste)
60mL water
1 lime, juice
(Mix these together before cooking)
Method
Bring quinoa and 4 cups /1L of water to boil, stir occasionally.
Cook for 10 mins until tender.
Rinse and drain with sieve.
While the quinoa is cooking, into a wok or saucepan, add the broccoli, garlic, carrots and mushrooms. Simmer until vegetables are tender.
Add peas and satay sauce.
Add cooked quinoa to wok and stir through.
Serve with sesame seeds and spring onion.
