Saucy Lamb Cutlets

This is a different way to cook lamb cutlets, you just need to give yourself a little time.

Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 4 Servings

Ingredients
8 lamb cutlets, trimmed of fat (or more for bigger appetites)
2 eggs, beaten
Dry breadcrumbs

For the sauce
4tbsp clear honey or maple syrup
4tbsp medium brown sugar
3 tbsp orange juice
3 tbsp balsamic vinegar
2 tbsp dark soy sauce
1 tbs tomato ketchup
1 teasp Dijon mustard

Method
  • Preheat the oven to 200°C/Gas 6.

  • Put the beaten eggs onto one plate and the breadcrumbs onto another one and dip the cutlets into one followed by the other.

  • Arrange the cutlets in a roasting tin and cook for 20 minutes.



  • Put all the sauce ingredients into a small saucepan, bring to the boil, and stir until everything is well blended.



  • After 20 minutes turn the oven down to 180°C/Gas 4, pour the sauce over the cutlets and return to the oven for a further 20 minutes.



  • when the sauce will have reduced, become syrupy and glazed the cutlets.



    We love to eat this with glazed carrots and creamy mashed potatoes.
