Sausage and Sweet Potato Bake
This meal is the perfect autumn/winter weeknight dinner as it is super quick to throw together. The mustard sauce gives the sausages and vegetables a lovely, sweet, tangy taste. You can add more or less of the roasting ingredients, although you may need to increase or decrease the sauce to accommodate this. The following served two adults and one child.
Preparation Time: 10 minutes
Cooking Time: 45 minutes
Serves: 3-4
Ingredients
6 sausages
1 large sweet potato
1 large brown onion
2 garlic cloves
1 small handful fresh thyme (or 1 tbsp dried thyme)
Mustard sauce
1 tbsp Dijon mustard
2 tbsp apple cider vinegar
1 tbsp olive oil
Method
Preheat your oven to 200°C and line a tray with baking paper.
Peel the sweet potato, garlic and brown onion. Cut the sweet potato into roughly 1cm pieces, and the onion into 6 wedges. Leave the garlic whole.
Place the vegetables on the tray with the sausages. Pierce the sausages a few times each with a sharp knife.
Whisk the mustard sauce ingredients and pour over the sausages and vegetables.
Place the tray in the oven for 45 minutes or until everything is cooked through. Turn the sausages over after 20 minutes.
Serve immediately.
