Sausage and Tomato Casserole
This dish is fairly easy to put together (just takes a bit of cooking time), and is delicious. The tomatoes bring a sweetness to the sausages and broccoli, and it makes for a hearty meal.

Cooking Time: around 80 minutes
Serves: 4
Ingredients
8 beef sausages
1 large brown onion, finely chopped
2 garlic cloves, finely chopped
2 celery stalks, thinly sliced
2 broccoli heads, roughly chopped
4 400g cans diced tomatoes
1/2 tsp dried thyme
1/2 tsp dried oregano
Method
Heat some oil in a heavy based pot over a medium to high heat. Add the sausages and cook for about 10 minutes, or until browned. Remove the sausages and leave to the side.
Add the onions, garlic and herbs to the pot with a bit of extra oil if needed. Saute for a few minutes or until the onion starts to soften.
Meanwhile, chop the sausages into roughly 1-2cm pieces.
Add the sausages to the pot and cook for about 5-10 minutes, adding the celery in at the end.
Stir well and cook for a further few minutes, until the
celery starts to soften.
Add the broccoli and mix well. Alternatively, if you don't want your broccoli to be quite soft, you can add it in a few minutes before you finish cooking.
Add the cans of tomato, plus about a can's worth of water (which can be used to clean out any tomato mixture left in the cans).
Turn the heat to high and put the lid on the pot. Bring to a boil, then remove the lid, reduce the heat and allow to simmer for 40-60 minutes, or until the sauce is reduced to your liking.
Serve with pasta or mash.
