Sausage Tomato and Canellini Casserole
If you're looking to make sausages a little more interesting, this casserole makes a perfect family dinner. You could use regular sized sausages but my kids like chipolatas. I usually serve this with a big mound of couscous. The casserole sauce is really tasty and is ideal for smothering over the couscous.
Preparation Time: 5 minutes
Cooking Time: 55 minutes
Serves: Family of four
Ingredients
1 onion
2 sticks celery
1 red pepper
3 garlic cloves
150g diced cooking chorizo
10 chipolata sausages
1.5 tsp paprika
0.5 tsp ground cumin
1 tbsp. dried thyme
125ml white wine
2 tins chopped tomatoes (each approx. 400g)
1 chicken stock cube
1 tin cannellini beans
Method
Dice the onion finely and fry in the oil over a medium heat in a large pan. The pan needs to be large enough for the whole recipe. A wide bottom casserole dish would work well.
Dice the celery and red pepper, then add to the onion and continue cooking for another 5 to 6 minutes.
Add the sausages to the pan and fry for 3 minutes until browning, thicker sausages will need a little longer, around 5 minutes.
Crush the garlic and add to the pan along with the spices and thyme and continue to cook for a couple of minutes.
Next add in the wine, tinned tomatoes and stock cube.
Simmer for around 40 minutes before adding in the Cannellini beans to warm through for a further 5 minutes.
This is a great one pot winter warmer.
