Sausages with Roast Cauliflower and Garlic Mash

Rather than the typical high carb bangers and mash, this version uses cauliflower instead of potatoes. The cauliflower mash really complements the pork sausages, and makes for a filling and delicious dinner. We served it with mustard and green beans.

To save time, you can always cook the sausages at the same time as the cauliflower, either on the lower heat (and leave the cauli in longer) or the higher heat (and remove the sausages sooner).



Preparation Time: 10 minutes
Cooking Time: 50-60 minutes
Serves: 4

Ingredients
8 pork sausages
1 head cauliflower
4 garlic cloves
1 tbsp olive oil
1 cup milk/yoghurt/coconut milk/water
1 spring onion
Salt and pepper

Method
  • Preheat oven to 220°C (430°F).
  • Break up the cauliflower into florets and spread out on a baking tray with the garlic cloves. Drizzle over the olive oil and toss to coat.
  • Place in the oven for 20-30 minutes, or until the cauliflower is golden and cooked through.



  • Lower the oven heat to 180°. Place the sausages on a baking tray and put in the oven for 30 minutes, turning over halfway through.
  • Meanwhile, allow the cauliflower to cool, for about 10 minutes.
  • Remove the garlic from its skin. Add to a food processor with the cauliflower and blend until smooth, adding the milk/yoghurt/water as you go. Season with salt and pepper.
  • Chop the green onion and scatter over the cauliflower mash.



  • Remove the sausages from the oven when cooked through and serve immediately with the mash.
