Sautéed Garlic Chive Flower Green Bean Sprout with Fried Prawn Egg

Quick, simple, delicious and healthy. Just ignore prawns if you like it as vegetarian dish.



Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2-3 servings

Ingredients
100g garlic chive flower
6-8 raw prawns, peeled
1 cup green bean sprout
1 tbsp extra-light olive oil
olive cooking spray
2 garlic cloves, peeled and minced
1 tsp shrimp paste
1/2 tsp raw sugar
2 eggs, lightly beaten
Salt and pepper

Method

  • Chop garlic chive flower into 4-5cm pieces. Rinse and drain.
  • Remove the bean part of the sprout (optional). Rinse and drain.
  • Rub the prawns with some salt under water, rinse and drain. Pat dry.



  • Spray cooking oil evenly on a frypan over medium heat.
  • Pour beaten egg into the pan.
  • Fry until just done. Remove from heat. Sprinkle with a bit salt and pepper. Then use a spoon to roughly cut into strips. Set aside.



  • Use the same frypan, fry prawns on each side until just golden. Sprinkle with a bit salt and pepper. Set aside.



  • Use the same frypan, heat 1 tbsp olive oil over medium-high heat. Add minced garlic and 1 tsp shrimp paste, saute for a minute.



  • Add garlic chive flower and 1/2 tsp raw sugar, saute for about 2 minutes until just tender.



  • Add sprouts and give a quick stir.



  • Add the fried egg strips and fried prawns. Remove from heat, toss gently to combine. Done.



  • Transfer to serving plate. Serve hot or warm as side dish.
